I’ve got a 2011 iMac that I upgraded with a Samsung SSD. Is there a way to check the health of the SSD like you would for the original HDD?
Can I also check the temperature of the SSD?
You can use DriveDX to check the health of the drive. If you want to see the temperature and fan speed, use Macs Fan Control to show it on the menubar.

How do I find the temperature display?

I don’t think so. I don’t know of any built-in way, but I can send you the link to Macs Fan Control. It’s safe, and you don’t have to worry about it.
